Ralph Fowler Classic
This is a limited release, handmade and bottle fermented sparking wine that has been 7 years in the making. Made from the Classic grape varieties of Chardonnay 60%, Pinot Noir 30% and Pinot Meuniere 10%.
The fruit was handpicked and gently whole bunch pressed in our basket press. Only the first cut juice (60%) was taken and cold fermented to produce a delicate and flavoursome base wine. A very early harvest was made and a 10.5 Baume and 10.6 grams per litre of natural acidity.
The Classic was tiraged and then underwent secondary fermentation in this bottle following the true methode traditionelle techniques. It has been rested for 7 years on the yeast lees before disgorgement allowing for the development of its fine and creamy mousse and yeast autolysis based flavours.
These uncomprimising wine-making practices have created a wine of both refinement and elegance.
The colour has pale yellow hues and the wine shows a fine persistent and lingering bead. Fresh aromas of rising bread, peach and lemon zest lead to a delicate palate of ripe citrus red berry and biscuity yeast all leading to a long rich and cleansing finish.
The Classic is the perfect opening to any occasion both intimate or extravagant.
