2016 Ralph Fowler Cabernet
Made from cabernet sauvignon grapes grown in the Mount Benson wine region of the Limestone Coast of South Australia. The cool maritime climate, the influence of the great Southern Ocean and the limestone based Terra Rosa soils are important factors in the quality of our wines.
Wild ferments in one tonne batches with minimal crushing and stems have created a natural wine that highlights the high natural acidity retained in the grapes by the cool slow ripening and the perfumed red berry characters that our terroir gives to the wine. The gentle handling and basket pressing have allow a fine gentle tannin on the finish.
Maturation for only 12 months in French oak barriques have rounded off the wine but ensured the retention of its fine berry perfume and fresh vibrancy.
This cabernet is cool climate with aromas of red berry dominate raspberry mulberry and wild cherry. The French oak maturation can be found in the mild cashew highlight and the high natural acidity in at harvest in the freshness and presence of the wine. The finish has some linger on the palate and the soft firm tannins of Cabernet Sauvignon.
The perfect partner for your classic roast pork recipe and best enjoyed over the next few years for it fresh fruity flavours. However the wines will age gracefully we recommend 2 to 4 years.
